Job Summary: We are seeking an Assistant Kitchen Manager with experience in supervision and dish preparation, responsible for personnel management, quality control, and inventory management in the kitchen. Opportunity for advancement to Chef, Maître, or Administrator ASSISTANT KITCHEN MANAGER Schedule: 48 hours per week Monday: 09:00 AM to 11:15 AM and 12:00 PM to 05:00 PM Tuesday: 10:00 AM to 11:15 AM and 12:00 PM to 05:00 PM Wednesday: 09:00 AM to 11:15 AM and 12:00 PM to 06:00 PM and 07:00 PM to 11:00 PM Thursday: Day off Friday: 09:00 AM to 11:15 AM and 12:00 PM to 05:00 PM Saturday: 09:00 AM to 11:15 AM and 12:00 PM to 05:00 PM Sunday: 06:00 PM to 12:30 AM Requirements: Graduate in Gastronomy. Solid knowledge of BPM (Good Manufacturing Practices). Minimum 2 years of kitchen experience. Minimum 6 months of experience managing personnel. Resident of Comas or Carabayllo. Responsibilities: Prepare weekly kitchen staff schedules. Record staff attendance daily. Generate daily purchase requests and transfer requests from the Production Center. Supervise and assist with daily mise en place. Supervise dish preparation in the grill, sandwich, salad, stir-fry, and rotisserie areas, following recipes and established presentation standards. Carry out and verify cleaning, disinfection, and organization of equipment and tools in accordance with sanitation and safety regulations. Conduct daily inventory of supplies in the work area.
