About the Position Based at Mandarin Oriental Punta Negra, Mallorca, within the hotel's Culinary Department, this role will support the Executive Steward and will be responsible for supervising and managing all stewarding operations in the hotel or restaurant. This position ensures cleanliness, organization, and safety across all kitchen and dining areas, as well as team management of stewards. The Assistant Chief Steward plays a key role in maintaining high sanitation and hygiene standards, as well as ensuring proper maintenance of kitchen equipment. This position is essential to the overall functioning of the Food and Beverage department, ensuring smooth coordination between kitchen staff, front-of-house teams, and management. As Assistant Chief Steward, you will be responsible for the following duties: * Supervision of Stewarding Operations: Lead and supervise daily stewarding operations to ensure cleanliness and organization in the kitchen, dining areas, and back-of-house. * Team Management: Direct and manage the stewarding team, ensuring staff are trained, motivated, and meeting required standards. * Sanitation and Hygiene: Oversee daily cleaning schedules for all kitchen and dining teams, including floors, walls, utensils, and equipment. Ensure compliance with local hygiene regulations and establishment sanitation standards. * Equipment Maintenance: Ensure all kitchen and dining equipment is in good working condition. Report any issues and coordinate with the maintenance team for necessary repairs or replacements. * Inventory Management: Monitor inventory of cleaning supplies, kitchen utensils, and related materials. Ensure proper storage and safe handling of chemicals and cleaning supplies. * Health and Safety: Ensure all health and safety procedures are followed, including proper handling of cleaning agents and correct waste disposal. * Interdepartmental Collaboration: Work closely with kitchen and food and beverage teams to ensure smooth operations and high service standards. * Scheduling: Manage stewarding staff schedules to ensure adequate coverage during peak hours, guaranteeing efficiency and productivity during high-activity periods. * Waste Management: Supervise waste management and recycling programs, ensuring compliance with environmental policies and standards. * Cost Control: Monitor costs related to cleaning supplies, equipment, and labor hours, identifying opportunities for improvement without compromising cleanliness or service standards. As Assistant Chief Steward, we expect the following from you: Experience and Education * Minimum basic qualification or equivalent. * Additional studies in hospitality, food and beverage management, or hygiene are valued. Courses in food safety, quality control, or hygiene regulations are especially appreciated. * Previous experience in cleaning or similar roles (minimum 1\-2 years). This includes experience in team supervision and managing cleaning tasks in kitchen or food and beverage environments. Technical Skills * Knowledge of cleaning products and their safe usage. * Familiarity with industrial washing equipment and basic maintenance. * Knowledge of hygiene and occupational safety regulations in kitchen and food service environments.
