Position Summary:
We are seeking administrators/nutritionists responsible for the full management of the food concession and for supervising compliance with the food safety system in distribution centers.
Key Highlights:
1. Responsible for the overall management of the food concession.
2. Supervision of compliance with food safety and quality regulations.
3. Leadership of personnel and operational control of production.
The food concession at distribution centers in Caral and Chiclayo is seeking 2 administrators/nutritionists, who will be responsible for the full management of the concession at their respective units and for supervising compliance with the Food Safety System.
Responsibilities:
* Supervise the duties of assigned staff to ensure adherence to established operational and quality processes.
* Supervise the entire operational flow (input requirements, internal receiving, production [preparation and cooking], line service).
* Implement Good Manufacturing Practices (GMPs), Standard Operating Procedures (SOPs), and Occupational Health and Safety Management System (OHSMS) procedures, including on-site supervision of staff hygiene, food handling, and area cleaning, as well as proper use of personal protective equipment (PPE).
* Identify unsafe conditions, spills, improperly handled hot equipment, or risks of cuts or burns; correct immediately and report to the OHSMS team.
* Maintain daily attendance records, absences, medical leaves, and workplace accidents (daily timekeeping sheet) and submit them within HR-defined deadlines.
* Ensure compliance with work schedules and working hours as permitted by law and per schedules submitted to HR.
* Address customer suggestions, complaints, and claims in accordance with established procedures and standards.
* Prepare reports, requests, forms, and visitor logs as required by Operations Management, adhering to deadlines set by that department.
* Develop monthly cyclical menus and weekly food requisitions.
* Monitor implementation of the cleaning and disinfection plan according to cleaning standards, environmental best practices, and safety requirements.
* Supervise the proper functioning of the plate-counting system.
* Verify that each dish meets organoleptic standards, complies with the standard recipe, portion size (gram weight), and defined presentation.
* Reassign duties based on demand (peak hours).
* Ensure smooth service delivery, appropriate service times, and a positive user experience.
* Identify overproduction, waste, and unnecessary reprocessing.
* Adjust production in real time.
* Prevent deviations resulting in client-imposed penalties against the company.
* Report incidents, stockouts, quality deviations, and complaints at shift close-out.
* Knowledge of nutritional consulting and ISAK 1\.
* Other duties assigned by immediate supervisor.
* Comply with MAC SAC’s rules, policies, and procedures.

REQUIREMENTS:
* Minimum 1 year of experience in food concessions.
**WORK SCHEDULE**
7:00 AM to 3:00 PM / 1:00 PM to 9:00 PM (Rotating Shift – Caral)
6:00 AM to 2:00 PM / 2:00 PM to 10:00 PM (Rotating Shift – Chiclayo)
Monday to Saturday
Salary: S/.2,500\.00 per month
