Opportunity for growth within a gastronomic project OPERATIONAL KITCHEN MANAGER / PRODUCTION AND CONTROL SUPERVISOR Company: La Plaza Artesanal Location: Lima – Primarily Miraflores Employment Type: Full-time ⸻ At La Plaza Artesanal, we seek an operational leader with expertise in production, control, and continuous improvement to lead our kitchen operations and coordinate workflow between our Miraflores and Los Olivos locations. The primary base for this position is Miraflores, with emphasis on kitchen supervision, production coordination, operational improvement, and active team leadership during peak hours. We seek a candidate deeply involved in daily operations, capable of resolving issues promptly, maintaining service pace, and ensuring smooth kitchen functionality. This role emphasizes operational execution and control far more than “haute cuisine.” ⸻ PRIMARY RESPONSIBILITIES * Monitor inventories and stockouts * Develop daily and weekly production plans * Organize mise en place and supply replenishment * Reduce shrinkage and waste * Streamline kitchen and dispatch workflows * Control dish delivery times * Implement operational checklists * Supervise cleanliness and orderliness * Standardize kitchen processes * Enforce existing recipes * Coordinate purchasing against actual consumption * Identify leaks and wastage * Supervise staff and maintain operational discipline * Actively participate in kitchen operations during peak hours * Coordinate production across both locations * Resolve operational contingencies during service ⸻ CANDIDATE PROFILE * Experience leading kitchen teams * Operational, organized, and solution-oriented profile * Ability to work under pressure * Speed and organization during service * Experience in high-volume restaurants * Preferred experience supervising multiple locations * Commitment and results orientation * Availability to actively engage in daily operations ⸻ VARIABLE BONUS PLAN This position includes a monthly variable bonus of up to S/ 2,000 based on operational performance.
