Job Summary: We are seeking a Head Chef with exceptional culinary skill and leadership to lead our kitchen specializing in traditional Peruvian cuisine, assuming full operational and production responsibility. Excellent working environment. **Position: Head Chef for Traditional Peruvian Cuisine** **Location:** La Molina, Lima **Schedule:** Tuesday to Sunday, 10:00 a.m. to 8:00 p.m. (Monday: Fixed day off) **Salary:** Negotiable (based on experience) We are looking for a Head Chef with exceptional culinary skill, leadership ability, and a strong sense of order to lead our kitchen specializing in traditional Peruvian cuisine. You will work closely with our Executive Chef, who will provide recipes and onboarding training, after which you will assume full responsibility for the business’s daily operations and production. We seek someone capable of treating the kitchen as their own! **What will be your main responsibilities?** * **Preparation and service:** Prepare traditional Peruvian dishes (e.g., Lomo Saltado, Seco con Frejoles, Tacu Tacu, Carapulcra) ensuring outstanding flavor and presentation. * **Production management:** Coordinate and supervise daily production and proper packaging. * **Kitchen administrative control:** Handle costing, portion control, and maintain strict adherence to portion standards. * **Procurement:** Submit weekly and biweekly supply requisitions and orders. * **Leadership:** Collaborate effectively as part of a team and supervise an assistant chef. * **Order and cleanliness:** Maintain the kitchen under strict standards of cleanliness, order, and organization. **What are we looking for in you?** * Proven experience as Head Chef or Kitchen Manager in traditional Peruvian restaurants. * Technical proficiency in cost control, portioning, and inventory/order management. * A person who is organized, clean, able to work under pressure, and capable of leading a team. * Residing in areas near La Molina (preferred). **What do we offer?** * Competitive salary, negotiable based on your profile and experience. * Fixed day off every Monday. * Excellent working environment and the opportunity to lead the kitchen of a growing business.
