Join the BIG BRASA family! **PROFILE REQUIREMENTS:** · **Education:** Completed secondary education or technical studies in Culinary Arts (preferred). · **Experience:** Minimum 2 years of experience in similar positions or within the gastronomy industry. · **Knowledge:** \- Chicken cooking techniques (oven/charcoal grill). \- Time and temperature control during continuous production. \- Hygienic food handling. \- Storage and preservation of ingredients. \- Waste control. · **Skills:** \- Speed and accuracy. \- Operational organization. \- Working under pressure. \- Responsibility. \- Teamwork. **MAIN RESPONSIBILITIES:** \- Perform opening procedures for the oven area, verifying order, cleanliness, equipment functionality, and initial stock availability to commence operations. \- Carry out cleaning, preparation, seasoning, and proper preservation of chickens according to BIG BRASA’s recipes and established standards. \- Light and prepare the oven correctly using charcoal and necessary equipment to ensure appropriate operating temperature. \- Execute chicken cooking, ensuring compliance with established standards for flavor, texture, juiciness, presentation, and cooking times. \- Continuously monitor temperatures, cooking times, and product rotation to guarantee production uniformity and minimize waste. \- Maintain continuous chicken production throughout the shift, ensuring constant availability for service according to daily demand. \- Verify chicken quality, freshness, and condition before, during, and after cooking, immediately replacing any non-conforming product. \- Portion and dispatch baked chicken promptly for dine-in, pickup, and delivery orders. \- Coordinate with the kitchen area and oven assistant to ensure continuous supply of ingredients and operational support during service. \- Keep the workstation fully stocked and organized, anticipating operational needs and shift requirements. \- Identify and promptly communicate required ingredients, products, or materials for the next day’s operation. \- Maintain cleanliness and order in the oven area, equipment, utensils, floors, walls, hoods, and ducts per established cleaning schedules. \- Correctly apply hygienic food handling standards to prevent cross-contamination and ensure product safety. \- Comply with safety regulations for handling ovens, fire, and heating equipment, properly using assigned personal protective equipment. \- Immediately report to management any incidents related to production, equipment, supplies, safety, or product quality. **BENEFITS:** \- Pleasant working environment. \- Ongoing training. \- Base salary: **S/1450 \+ S/550 per overtime hour** \- Formal payroll registration with statutory benefits. **SCHEDULE:** Full-time: 11:00 AM to 11:00 PM. **LOCATION:** **Av.
